While many cobb salad recipes call for serving it with bread, to keep this dish keto friendly, we've added plenty of protein and fat from vegetables like avocados to the salad.

This recipe is easy to prepare. Start by making the salad dressing in a bowl, adding mayonnaise, red wine vinegar, and yogurt.
After the sauce is ready, you need to chop the vegetables and prepare the bacon and eggs. The bacon needs to be cooked in a pan and then sliced, while the eggs need to be boiled before being sliced ​​and added to the bowl. Finally, add blue cheese and dressing.


If you don't like blue cheese, feel free to substitute another cheese you like better, like mozzarella or cheddar. And if you want a veggie cobb, just remove the bacon.


Ingredients:


  • hard boiled eggs - 8 pcs
  • bacon - 8 slices
  • cherry tomatoes - 1/2 cup
  • blue cheese - 1/2 cup
  • avocado - 1/2 piece
  • green onions - 2 tbsp
  • mayonnaise - 3 tbsp
  • Greek yogurt - 3 tbsp
  • salt and pepper - to taste



1. Measure and prepare all ingredients.

2. In a bowl, mix mayonnaise, Greek yogurt and red wine vinegar. Season with salt and pepper. Mix well.

3. In a bowl, combine chopped hard-boiled eggs, crumbled bacon, sliced ​​avocado, cherry tomatoes, and blue cheese.

4. Pour dressing into salad bowl.

5. Put on a plate, season with chopped green onions and enjoy!
