Flaxseed flour has a particularly high content of lignan nutrients, which have an antioxidant effect. Partially defatted flaxseed flour, compared to other gluten-free flours, gels and holds the dough together. It swells very much (up to 4 times the water absorption) and can be used to keep baked goods fresh longer. Its light color goes well with baked goods. For bread and baked goods, 10–20% of regular flour can be substituted for flaxseed flour.
